Arrange the vegetables into an ungreased baking dish. Spoon remaining cheese on top as if filling a sandwich. Repeat steps with remaining vegetables. Once done, cover vegetables with tofu leaves. Leave at least 10 minutes for the tofu to get to room temperature. Roast tofu in the oven until crispy. Serve tofu with freshly mixed bowls of salad and toppings. Top some more fresh vegetables with cheese then place on the baking sheet covered with foil. Let tofu sit for at least 10 minutes. Cook the rest of your vegetables according to your preferences. Serve with soy fries instead of rice tacos or pulled pork tacos because tofu is gluten free. I had to change the serving size and this made me want to try another type of taco as well.
